Salami Cups



Quantity Ingredient
12 slices Black Kassel Old Forest Flower Salami
12 slices Black Kassel Picante Flower Salami
1/2 package Black Kassel Spicy Chorizo Sausage, Diced
Antipasto Cucumber, chopped
Cherry tomatoes, chopped
Black olives, chopped
Bocconcini cheese, chopped
Extra virgin olive oil or Light dressing
Salt and pepper to taste
Garnish Basil leaves



Salami Cups:

Preheat oven to 375°F. Put slices of Black Kassel Old Forest and Picante Flower salami in a small muffin pan, pressing the salami into the side of the pan. Tear aluminum foil into pieces and mold into foil balls about the size of the muffin cup. Push foil balls into each muffin cup to help the salami maintain cup shape during baking. Place in the pre-heated oven and bake until the salami is crisp to your liking (8-10 minutes). Remove muffin pan from oven and let cool for 5-10 minutes. Remove salami cups from muffin pan and discard foil balls.


In a medium bowl combine Black Kassel Spicy Chorizo Sausage, cucumber, cherry tomatoes, black olives, and Bocconcini. Toss with olive oil or a light dressing and add salt and pepper to taste.


Place baked salami cups on a platter and fill each cup with antipasto mixture. Top with basil leaves and enjoy!
