Quiche with Pannonia Ham and Mushrooms



Quantity Ingredient
1 cup Black Kassel Pannonia Ham
2 tsp. vegetable oil
1 tsp. garlic, minced
1 ½ cup onion, chopped
2 ½ cup mushrooms, chopped
⅝ cup frozen chopped spinach, defrosted and squeezed dry
1 cup old cheddar cheese, grated
3 Tbs. Parmesan cheese, grated
3 eggs
2 egg whites
2 Tbs. rice or potato flour
3 Tbs. fresh dill, chopped, or 1 tsp. dried
Pinch salt and pepper



Preheat oven to 350°F. Lightly coat a square or round baking dish with vegetable oil spray. Heat the oil in a large, non-stick skillet over medium heat. Add garlic and onions and sauté for 3 minutes. Add diced ham and sauté for 5 minutes. Add mushrooms and cook until softened, 5 minutes. Add spinach and cook for 2 minutes. Remove from the heat and add cheddar and Parmesan cheeses, eggs, egg whites, flour, dill, salt and pepper. Mix well and pour into the prepared pan. Bake in the center of the oven for 35 - 40 minutes, or until a knife inserted in the center comes out clean. Serve warm.
